The Assistant Sous Chef is third in command of the kitchen and is responsible for the physical aspect of the kitchen operation, including supervision of kitchen personnel as well as the preparation and serving of food. The Assistant Sous Chef assumes all the duties of the Chef in the chef’s absence.

  • Prepares all hot or cold food according to the banquet function sheets.
  • Must be able to follow recipes and finish all work assigned by the scheduled time.
  • Maintains work areas in a clean and orderly fashion. Clean up after yourself as you work.
  • Leads by example. Sets a standard for Cooks and Pantry personnel to follow.
  • Must have thorough knowledge of food handling and sanitation guidelines, including inventory rotations and storage. Must be able to work neatly with good organization skills.
  • Must be prepared to work in other areas when asked by being flexible.
  • Must be familiar with the use and maintenance of all types of kitchen equipment, including knives and other kitchen equipment.
  • Wears a proper uniform at all times and keeps it clean.
  • Practices safe techniques for handling any foods.
  • Any task issued by management will be considered as part of the job.
  • Always is polite to all customers at all times to set a standard above the rest.
