Position Summary

The Food & Beverage Director is responsible for the overall leadership, financial performance, operational execution, and guest experience of all food and beverage operations at Texas Trust CU Theatre at Grand Prairie. This position leads the venue’s food and beverage strategy across concerts, live entertainment, private events, VIP and premium experiences, suites, bars, concessions, catering, and other special events. The Food & Beverage Director will develop innovative revenue-generating programs while maintaining exceptional standards for hospitality, food quality, responsible alcohol service, safety, sanitation, staffing, and operational efficiency. The ideal candidate is an experienced hospitality and entertainment professional who thrives in a high-volume, fast-paced environment and understands that successful venue F&B requires both strong financial discipline and an outstanding guest experience.

 

This role pays an annual salary of $90,000-$98,000 and is bonus eligible.

Responsibilities

Leadership & Operations

  • Lead all food and beverage operations for the venue, including concessions, bars, premium areas, suites, catering, and private events.
  • Develop and implement operating standards, procedures, and service expectations for all F&B outlets.
  • Lead event-day operations and ensure appropriate staffing, product availability, service levels, and guest satisfaction.
  • Work closely with venue management, event operations, security, guest services, production, and promoters to ensure seamless event execution.
  • Establish a strong culture of accountability, hospitality, teamwork, and continuous improvement.
  • Serve as the senior F&B leader during major events and high-profile performances.

Financial Management

  • Develop annual food and beverage budgets, forecasts, revenue goals, and operating plans.
  • Drive revenue growth and profitability through strategic menu development, pricing, labor management, inventory controls, and event-specific planning.
  • Analyze sales, labor, product costs, margins, per-capita spending, and other key performance indicators.
  • Prepare and present regular financial and operational reports to venue leadership.
  • Identify opportunities to increase F&B per-capita revenue while maintaining quality and guest satisfaction.
  • Manage purchasing, inventory, waste, spoilage, and cost-control programs.

Event & Venue Management

  • Create event-specific F&B plans based on attendance, audience demographics, event type, historical sales, artist requirements, and operational needs.
  • Forecast product and staffing requirements for events ranging from standard concerts to high-volume sold-out performances.
  • Coordinate F&B operations for VIP events, corporate functions, private events, premium hospitality, and suite service.
  • Collaborate with promoters, event organizers, caterers, vendors, and other partners to meet contractual and operational requirements.
  • Conduct pre-event and post-event meetings to review expectations, performance, and opportunities for improvement.

Guest Experience

  • Maintain a premium hospitality experience consistent with the venue's brand and clientele.
  • Monitor guest feedback and develop initiatives to improve speed of service, product quality, menu selection, and overall satisfaction.
  • Develop creative food, beverage, cocktail, and premium hospitality concepts that complement the venue and its diverse entertainment calendar.
  • Evaluate emerging hospitality trends and introduce new concepts that can increase revenue and differentiate the venue.

Alcohol Compliance & Safety

  • Ensure all alcohol service complies with Texas laws, TABC requirements, venue policies, and responsible alcohol-service standards.
  • Maintain effective age-verification, intoxication-prevention, and responsible-service procedures.
  • Ensure employees receive appropriate alcohol service and safety training.
  • Partner with security and venue leadership to address alcohol-related incidents appropriately and safely.
  • Maintain compliance with all applicable health, sanitation, food safety, OSHA, and local regulatory requirements.

Team Development

  • Recruit, train, coach, and develop F&B managers, supervisors, bartenders, servers, culinary staff, concession employees, and event staff.
  • Establish staffing models based on event attendance and operational requirements.
  • Create training programs focused on hospitality, service standards, food safety, alcohol compliance, POS procedures, upselling, and guest engagement.
  • Conduct performance evaluations and provide ongoing coaching and development.
  • Build a reliable event-staffing pipeline capable of supporting high-volume concert operations.

Vendor & Purchasing Management

  • Manage relationships with food, beverage, alcohol, equipment, and service vendors.
  • Negotiate pricing and purchasing terms when appropriate.
  • Monitor vendor performance, product quality, delivery schedules, and contract compliance.
  • Maintain appropriate inventory levels while minimizing waste and carrying costs.
  • Evaluate new products and suppliers to improve quality, profitability, and guest offerings.

Qualifications

  • Bachelor’s degree in Hospitality Management, Business Administration, Food & Beverage Management, or a related field preferred.
  • 5-7+ years of progressive food and beverage management experience, preferably in a high-volume entertainment venue, arena, theater, stadium, hotel, resort, restaurant group, or similar operation.
  • Previous experience managing large-scale events, concerts, catering, concessions, premium hospitality, or multi-outlet F&B operations strongly preferred.
  • Proven experience managing budgets, P&L statements, labor costs, inventory, purchasing, and revenue-generating initiatives.
  • Strong knowledge of food safety, sanitation, responsible alcohol service, and applicable regulatory requirements.
  • Experience with POS systems, inventory systems, scheduling platforms, and Microsoft Office.
  • Strong leadership, communication, organization, negotiation, and problem-solving skills.
  • Ability to remain calm and decisive in a fast-paced, high-pressure event environment.
  • Ability to work evenings, weekends, holidays, and extended hours based on the venue's event schedule.

Preferred Experience

  • Live entertainment, concert venue, theater, arena, stadium, or performing arts experience.
  • Experience operating a venue with 5,000+ guest capacity.
  • Premium/VIP hospitality and luxury suite experience.
  • Experience with high-volume alcohol operations.
  • Experience managing both full-time employees and large pools of part-time/event staff.
  • Experience developing menus, beverage programs, specialty cocktails, and event-specific promotions.
  • Experience working with national touring acts, promoters, corporate clients, and private-event customers.

Physical & Work Requirements

  • Ability to work in a large entertainment venue for extended periods.
  • Ability to walk and stand for extended periods during events.
  • Ability to work in crowded, high-energy environments with elevated noise levels.
  • Must be available for a flexible schedule, including nights, weekends, holidays, and event-driven hours.
  • Ability to respond quickly to operational issues during live events.
