Position Summary

Reporting to the Assistant General Manager (AGM), the Concessions & Beverage (C&B) Director works closely with the Catering & Premium Director and Executive Chef, and oversees the Concessions/Bar/Warehouse operations at Ford Idaho Center (FIC) and Nampa Civic Center (NCC), utilizing initiative and independent judgment. They deliver high quality food/beverage products, presentation and service execution for all FIC/NCC events. The C&B Director monitors, controls and audits all aspects of the Concessions and Bar departments, including but not limited to delivering quality experiences to guests of the facility, developing innovative menus, hiring/training/developing current and new service/leadership staff, and ensuring proper care and handling of all food, beverage, cash and equipment. They will actively supervise, coach, counsel, direct, train and mentor employees in meeting company quality standards, and will independently initiate and authorize all employment actions such as hiring, termination, suspension, discipline, promotion and transfer. The C&B Director oversees all operational logistics and distribution for the Concessions Warehouse and storage areas at FIC and NCC. This position is consumer-facing and is expected to maintain a professional, positive and service-forward attitude at all times. This is a key role for the effective and profitable operation of the business. The C&B Director must maintain excellent attendance and be available to work a variable event-driven schedule which includes evenings and weekends. Open availability, professional presentation, outstanding interpersonal skills, self-direction and strong management skills are required.

 

This role pays an annual salary of $60,000-$75,000.

About the Venue

The Ford Idaho Center consists of a 12,000 capacity Arena, 11,000 capacity Amphitheater, and 40-acre Horse Park. The venue works with the nation’s leading promoters (Live Nation, PBR, FELD, AEG, Pepper Entertainment, etc.) to produce world class events like Kenny Chesney, Zach Bryan, Professional Bull Riders, Hozier, Monster Jam, and many more. This is the premier Multi-Event Complex in the Pacific Northwest. Responsibilities

  • Develops and submits event over event tip-out reports to Office Manager.
  • Coordinates QSR needs with the Sports Center and Horse Park Event Clients.
  • Coordinates/supervises F&B subcontractors and terminates/recruits as necessary.
  • Directly supervises, (re)trains, mentors and manages the performance of the Concessions Service Manager, Concessions Operations Manager and Concessions Warehouse Manager.
  • Works in tandem with the Catering & Premium Director and Executive Chef to ensure interdepartmental cohesion, clear communication and smooth event execution.
  • Manages and participates in the development and implementation of goals, objectives, policies and priorities of all concessions and bar programs/projects. 
  • Directly responsible for labor cost controls and cost of goods sold; forecasts and monitors concessions revenue.
  • Ensures that event plans are followed accurately, but can purposefully pivot when plans change.
  • Develops programs for high quality food/beverage products, presentation and service execution; implements new bar/concessions menus, concepts, promotions and services.
  • Supports Concessions Managers in the recruiting/training of concessions/bar/warehouse staff; guides performance management for each department; works directly with employees to correct deficiencies.
  • Demonstrates continuous effort to improve operations, decrease turnaround times, streamline work processes, and provide quality seamless customer service. 
  • Develops and utilizes a thorough understanding of F&B Subcontractor and Non-Profit Organization agreements/expectations, acting as the face of OVG Hospitality throughout these relationships.
  • Establishes and maintains effective working relationships with inter-divisional directors and facility stakeholders; regularly interacts with event managers, guests and clients.
  • Provides Concessions Managers with the proper direction and resources, follows up on all assignments, and ensures all deadlines and expectations are met.
  • Is visibly present and engaged in guest service areas to maintain contact with clients, ensure satisfaction levels are achieved and take corrective action when necessary. 
  • Inspects the food and beverage equipment regularly to ensure that the established quality standards are maintained; reviews inspection results with Concessions Operations Manager and initiates a corrective action plan as needed. 
  • Protects the operating assets of the FIC/NCC; Maintains dynamic asset management and Warehouse inventory control programs.
  • Works in tandem with Concessions Managers to ensure proper set-up of all concessions locations prior to doors.
  • Set-up duties may include:verifying opening inventory, assigning duties to concession workers (employee/volunteer), ensuring sanitation standards are met, verifying that each location is fully operational, ascertaining levels of food production based upon projected guest attendance has been met.
  • Ability to plan and execute the effective management of events for upwards of 10,000 guests; oversees a large volume of inventory and manages high volume sales.
  • Ensures that all City/County/State/Federal and OVG policies, procedures and practices are adhered to, including compliance with alcohol distribution/service and food handling, and sanitation guidelines, general safety policies and procedures.
  • Reports any alcohol service or other compliance issues to AGM immediately.
  • Completes post-event notes and ensures closing Concessions Managers on duty complete/submit End-of-Day Reports.
  • Ensures the work environment is safe and free from harassment or discrimination; immediately addresses all safety concerns, potential hazards, accidents or incidents.
  • Relays safety/health issues to AGM immediately.
  • Ability to obtain working knowledge of all existing concession locations: geographical locations, equipment, evacuation procedures, adjacent employee and guest areas and facility access.
  • Completes through market and competitive analyses, stays abreast to new developments in the industry and keeps the concessions/bar operations interesting and engaging.
  • Works closely with the Partnerships Manager and Marketing Director to coordinate distributor/vendor relations and promotions.
  • Performs other duties as required by AGM.

Qualifications

  • High School Diploma (or equivalent) required.
  • Bachelor’s Degree in Culinary/Hospitality/Business Management or related field, or equivalent combination of education and experience.
  • 5+ years related hospitality management experience required, preferably in live event/venue Concessions.
  • Experience in Beverage program management is highly preferred.
  • TIPS and ServSafe Management certifications preferred (must be able to obtain).
  • Must be able to communicate with employees, co-workers, volunteers, management staff and guests in a clear, concise, professional and respectful manner which focuses on generating a positive and cooperative work environment.
  • Experience employing modern management methods, long range planning, principles of budgeting, and leadership skills. 
  • Must be able to lead, motivate and relate to staff, peers, and clients in a consistently positive, engaged and supportive manner. 
  • Working knowledge of sales, marketing, event services, safety and security, financial reports, and human resources. 
  • Knowledge of EEOC, FLSA, OSHA, ADA, Fire Code and other employment regulations. 
  • Demonstrated proficiency in computer programs (e.g: Microsoft Word, Excel, Powerpoint, Outlook, SharePoint, etc.); Experience with ADP, Micros Oracle, TripleSeat, CaterEase, VenuePro and/or EventBooking a plus.
  • Ability to work a flexible schedule including early mornings, days, evenings, weekends, holidays, extended (long) workdays and extended numbers of days.
  • Possess thorough working knowledge of all applicable sanitation requirements, food preparation guidelines, alcohol service policies, safety standards, etc. pertaining to concession operations.
  • Ability to be detail-oriented, multi-task and effectively prioritize in a continuously changing environment.
  • Advanced knowledge of inventory procedures and controls; experience ordering product for a high-volume venue or facility.
  • Ability to make sound business/operations decisions (i.e. regarding employee placement, staffing adjustments, and/or respond to technical, product or equipment challenges during an event) quickly and under pressure.
  • Ability to calculate basic math functions (addition, subtraction, multiplication, division, percentages) as they relate to POS cash/credit transactions, cash reconciliation and product inventory.
  • Ability to consistently adhere to the highest standards of integrity, ethics and confidentiality.
  • Ability to fluently speak, read and write in English.

Physical Dimensions:

  • Performing the duties of this position involves frequent long days that require extensive and continuous standing and walking.
  • Routine activities require the employee to be able to reach with hands and arms, sit, walk, stoop, kneel, crouch and crawl.
  • The employee is often required to lift up to 50 pounds.
  • The vision requirements include the ability to adjust focus, peripheral vision and close vision.
