Position Summary

The Team Sous Chef is a member of the Allegiant Stadium Culinary Department, the Team Sous Chef is responsible for the preparation of team and coach meals during all the NFL season (Home Games Only)

 

This is a key position for the effective and profitable operation of the business. The employee must maintain excellent attendance and be available to work a variable event-driven schedule which includes evenings and weekends. Open availability, professional presentation, outstanding interpersonal skills, self-direction and strong management and independent decision-making skills are required.

 

This role will pay an annual salary of $60,000 to $80,000.

This position will remain open until May 22, 2025.

Responsibilities

  • Prepare and execute meals according to the team's nutritional guidelines and dietary restrictions, as directed by the Executive Chef and team nutritionists.
  • Ensure precise portion control and adherence to specific macronutrient requirements.
  • Prepare a variety of meals to cater to the diverse dietary needs and preferences of professional athletes.
  • Maintain meticulous records of food preparation, ingredients, and nutritional information.
  • Work closely with team nutritionists to understand and implement dietary plans.
  • Ensure all meals meet the highest standards of nutritional quality and safety.
  • Stay up-to-date on the latest sports nutrition research and trends.
  • Oversee the daily operations of the team's kitchen, ensuring a clean and organized environment.
  • Manage inventory and ordering of food supplies, ensuring freshness and quality.
  • Maintain and operate kitchen equipment safely and efficiently.
  • Ensure compliance with all food safety and sanitation regulations (HACCP, etc.).
  • Provide culinary support during team home games
  • Prepare and pack meals for travel, ensuring freshness and nutritional integrity.
  • Collaborate with team staff to ensure seamless meal service.
  • Maintain a high degree of discretion and professionalism.
  • Assist in training kitchen staff on proper food handling, preparation, and nutritional guidelines.
  • Provide guidance and support to team members.

Qualifications

  • Culinary Degree or equivalent work experience
  • Minimum of 3-5 years of experience as a Sous Chef or senior line cook, with a strong emphasis on healthy and performance-driven cuisine.
  • Strong understanding of sports nutrition and dietary requirements of professional athletes.
  • Excellent culinary skills and knowledge of various cooking techniques.
  • Proven ability to work with specific dietary restrictions and preferences.
  • Excellent knowledge of food safety and sanitation regulations.
  • Serv-Safe certification
  • Strong organizational and time-management skills.
  • Ability to work in a fast-paced, high-pressure environment.  
  • Excellent communication and interpersonal skills.
  • Ability to work flexible hours, including nights, weekends, and travel.
  • A culinary degree or certification is preferred.
  • Experience working with professional athletes or in a sports performance environment is a plus.
  • Must be able to work 10-12 hour shifts, nights, weekends, and holidays
